Ingredients

  • 3 Cups All-purpose flour (360 grams)
  • 1.5 Cups Warm water (350 ml) (about 110°F or 45°C)
  • 2.25 tsp Instant dry yeast (1 packet)
  • 1 tsp Sugar
  • 1 tsp Salt
  • 2 tbsp Olive Oil
  • Cornmeal or semolina flour for dusting (optional)

Instructions

  • In a small bowl, combine the warm water, sugar, and instant yeast. Stir gently and let it sit for about 5-10 minutes until the mixture becomes frothy and bubbly. This indicates that the yeast is activated.
  • In a large mixing bowl add flour and salt and combine well. Then pour in the activated yeast mixture and olive oil in the dry flour and salt mixture. Stir it using a wooden spoon or hands until a shaggy dough forms.
  • You need to knead the dough for about 8-10 minutes until it becomes smooth and elastic. If the dough is still sticky, add a little more flour as needed. Leave the dough in a clean lightly oiled bowl for about 1-1.5 hours. This allows the dough to rise - make sure it is nicely covered with a plastic wrap or kitchen towel.
  • Give the dough an oval or round shape or as you like, then place it on a parchment paper-lined baking sheet. Cover it loosely with a kitchen towel and let it rise for another 30-45 minutes. While the dough is rising for the second time, preheat your oven to 425°F (220°C). Place an empty baking dish or tray on the bottom rack of the oven.
  • Optional: Just before baking, use a sharp knife to make shallow cuts (about ½ inch deep) on the surface of the dough. This helps the bread expand while baking and creates a beautiful crust. Dust the bottom of the bread with cornmeal or semolina flour for added crispiness.
  • Place the bread in the preheated oven and pour about 1 cup of hot water into the empty baking dish or tray on the bottom rack to create steam. This steam will help create a crispy crust. Bake for 25-30 minutes, or until the bread is golden brown.

Healthy and Easy Vegan Focaccia Bread Recipe

My Vegan Focaccia Bread Recipe offers a unique twist on traditional Italian bread, catering to those following a plant-based diet. Without using eggs or dairy products this recipe will allow you to bake a light, slightly chewy and perfectly delicious bread.

Freshly baked olive focaccia bread on parchment paper.

Ingredients:

  • 4 cups (480 grams) of all-purpose flour
  • 2 teaspoons salt
  • 2¼ teaspoons instant yeast (1 packet)
  • 2 cups warm tap water 115°F
  • 1 ½ teaspoons White Granulated Sugar
  • 1 teaspoon vegan butter
  • 4 tablespoons olive oil (you can use any vegetable oil like coconut oil or whichever taste you prefer)
  • Fresh Rosemary or finely chopped herbs

Instructions:

Prepare a 9″ x 13″ oven-safe dish by greasing it with vegan butter. Then drizzle 2 tablespoons of olive oil all over the greased dish.

Next, prepare dough by adding all-purpose flour, sugar, instant yeast, and salt to a mixing bowl and mixing well. Then, add warm water and two tablespoons of olive oil in it.

Place the dough in the previously greased baking dish. Don’t try to spread the dough, just let it sit in the dish in any way it lands and leave it well covered for 1 hour. You will see that the dough has risen and spread out after 1 hour. Now, preheat the oven to 425°F (220°C).

To make holes in the dough, dip your fingers in olive oil (this will prevent them from sticking) and press holes throughout the dough. On top of the dough, sprinkle fresh rosemary and salt and drizzle the remaining 2 tablespoons of olive oil. Put it in the oven for 20 minutes until it’s golden brown.

Either slice and serve directly in the dish, or remove the baked focaccia from the baking dish and cut into squares. It’s best enjoyed freshly baked; however, it can also be frozen for up to a month wrapped in plastic wrap and foil. Here is the appropriate method to reheat bread to preserve its flavor and texture.

  • 1 cup (120 grams) of oat flour
  • 1/2 cup ground flax seeds
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups unsweetened almond milk (or any plant-based milk of your choice)
  • 1/4 cup maple syrup or agave nectar
  • 2 tablespoons apple cider vinegar
  • 1/2 cup chopped whole gains or seeds (optional, for added texture and flavor)

Instructions:

In a separate bowl, whisk together the almond milk, maple syrup or agave nectar, unsweetened applesauce, and apple cider vinegar until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can result in a dense loaf. Fold in the chopped nuts or grains, if using. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake it for 45-55 minutes in the preheated oven, you can check it’s fully baked by inserting a toothpick into the center.

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Once cooled, slice and enjoy your delicious Whole Food Plant-Based Bread! This bread is perfect for sandwiches, your favorite avocado toast, or can be enjoyed on its own.

Different Types of Bread to Eat on a Plant-Based Diet

What bread is best for vegans? Do vegans need special bread? I’m going to answer all your questions – so you can maintain a healthy vegan diet. Breads that contain multi-grains, whole grains, or sprouted grains, like Ezekiel bread, provide numerous health benefits and are ideal for a plant-based meal plan. On the other hand, bread made from refined flour lacks the fiber and protein present in whole grain, multigrain, or sprouted grain bread. Vegans require protein from plant-based sources since they don’t consume animal products. Moreover, fiber is a crucial component of any diet as it aids in digestion regulation and reduces the chances of heart disease.

  • Alvarado Street Bakery: Alvarado Street Bakery produces organic, vegan bread using whole grains and seeds. They offer a range of options, including sprouted wheat, sourdough, and multi-grain breads.

Ezekiel’s whole grain bread is crafted from organic sprouted lentils along with other nutritious ingredients such as fresh yeast. Sprouted grain breads contain complete sprouted grains (the kernel, or berry) of different seeds. This type of bread is less processed than other options available in the market (white bread), making it healthier. It contains a higher amount of calcium, fiber, iron, and protein compared to the average slice of bread.
