  • 1 pack Kidney beans
  • 2 pcs Spring onion

  • 1 pcs Unwaxed Lime
  • 1 pack Tomato polpa
  • 1 cup Coconut milk (250 ml)
  • 2 pcs Tortilla wraps
  • 1 tsp Spice mixture "Hello Cocnut Curry2"
  • 1 tsp Coconut flakes
  • 1 tbsp Cooking oil
  • 1 tbsp Olive oil
  • 1 Salt
  • 1 Pepper

  • Start by preheating your oven to a toasty 430°F (220°C) top/bottom heat (390°F or 200°C if you use a fan oven). Then prepare the veggies by slicing the peppers in half, scooping out the core, and chopping them into small 2cm cubes.
  • Next, separately slice the spring onions white and green parts into rings. Also, peel the garlic clove. Then, cut the lime into two pieces, you will squeeze half the lime during cooking, and save half of it for later (seasoning). Finally, quickly rinse those kidney beans under cold water using a mesh strainer.

  • Now that everything is prepared and ready to go, let's get to cooking! Take a large pot place it on a stovetop set to medium heat, and add 1 tablespoon, or up to 1.5 to 2 tablespoons of oil in it.
  • When the oil is adequately heated, add the finely sliced rings of white spring onions and the diced peppers into the pot. Then, press the garlic cloves into the mixture, and sauté for up to 3 minutes, allowing the flavors to blend and intensify.
